Dole Whip Cupcakes

- One Box of Yellow Cake Mix
- One Cup of Crushed Pineapples With Juice
- Three Large Eggs
- ⅓ Cup of Vegetable Oil
- One Cup of Butter (Two Sticks)
- ¼ Cup of Pineapple Juice
- Two Cups of Powdered Sugar
- One Teaspoon of Vanilla
- Small Pineapple Wedges (For Garnish)
- Gold Paper Straws
- Preheat your oven to 325 degrees.
- Line two cupcake pans with cupcake liners.
- Mix together the Cake Mix, Crushed Pineapples, Eggs, and Vegetable Oil into a large bowl.
- Blend with a hand mixer until smooth.
- Pour batter into cupcake pans and bake in the oven for 20 minutes.
- Once cupcakes are finished baking, place them wire racks to cool.
- Wait until the cupcakes are completely cool before icing.
- While your cupcakes are baking, start making your frosting.
- Grab a bowl and mix together the pineapple juice and softened butter.
- As your mixture blends, pour in the powdered sugar until you get a smooth consistency.
- Spoon your frosting into a pastry bag for icing the cupcakes.
- Swirl the icing on the cooled cupcakes in a softserve-like pattern.
- Top the cupcakes off with a slice of pineapple and a small gold paper straw.
